Busy Morning Breakfast Ideas

Breakfast is the most important meal of the day for many reasons. Not only does your morning meal rev your metabolism but it fuels your brain so you can be a smashing success! This week we are celebrating National School Breakfast Week by encouraging parents and students alike to ditch the unhealthy cafeteria foods and try some of these delicious yet nutritious meals.

Pancake Popover

We still remember being a child and waking up to the heartwarming smell of pancakes in the morning. These Pancake Popovers make a beautiful fluffy pan of nostalgia complete with loads of protein to keep you full and ready to take the day head on.

1 serving | per serving: 1 protein, 1 refined starch or 1 Thermo-Snacks®

1 package Old Fashioned Stack Pancake Mix Thermo-Snack
2 eggs
2 ounces water
1⁄2 teaspoon cinnamon
1 teaspoon or 1 packet of zero calorie sweetener Truvia Granulated Brown Sugar (optional)

Mix all the ingredients, Pancake Mix Thermo-Snack through sweetener, and bake at 350 degrees F. for 15–18 minutes, until done. May microwave in glass bowl or coffee mug for 1:20 – 1:40 minutes on high.

Sprinkle with brown sugar if using.

Breakfast Sausage

We don’t know about you, but we LOVE making our own sausage that is free of the inflammatory chemicals that most major stores and companies use. This recipe is mouth-watering good and so easy make in bulk for your freezer. Simply make serving size baggies of patties and freeze for an easy protein to cook in the morning.

per serving: 1 protein

1 pound extra lean or lean ground turkey
1 teaspoon dried sage, crushed
1 teaspoon dried thyme, crushed
1 teaspoon Morton® Lite Salt
3⁄4 teaspoon black pepper
1⁄2 teaspoon red pepper flakes, crushed
1⁄2 teaspoon fennel seeds, crushed
1⁄4 teaspoon dried rosemary
1⁄4 teaspoon paprika (sweet or hot or smoked)
1/8 teaspoon garlic powder
1/8 teaspoon ground nutmeg

Mix all ingredients in a bowl and combine very well using your hands. Flatten into small patties. Brown in a sauté pan on one side, and flip onto the other side and brown until done.

Portion appropriately to your plan by weighing after cooking and having the proper serving size for your plan.

1 egg, beaten
1 tablespoon water

Mix ingredients and bake at 350 degrees F. for 10–15 minutes, until done. May microwave in glass bowl or coffee mug for 1:20 – 1:30 minutes on high.

Granola and Greek

Greek yogurt is a powerful source of protein and calcium necessary to keep your metabolism running efficiently for the rest of the day. Paired with some crunchy granola and your favorite fruits, this breakfast is both beautiful and perfectly nutritionally balanced. How perfect is that? 

1 serving | per serving: 1 Protein, 1 Fruit, 1 Starch, 1 Dairy

1/2 cup low fat Greek yogurt
1/4 cup sliced strawberries
1/4 cup halved cherries
1/3 cup Chocolate Caramel Granola
Stevia (to taste)

Simply mix all of the ingredients together and enjoy!
