Chicken 3 Ways
Do you know what is amazing about chicken? It is so versatile that buying a single bag or family pack can result in a number of different meals. Grocery stores also carry many different cuts of chicken from whole, tenders, thighs, breasts and more. Buying chicken this way not only helps save money when you meal prep for the week but it keeps you interested and having fun with trying new recipes. We’ve put together a few of our favorite recipes to enjoy next time you’re craving delicious chicken cuisine. Cheers!

Mustard Pretzel Chicken
1 serving | 1 protein, 1 Thermo-Snacks®, 1/2 Fat
1 package Pretzel Twist Thermo-Snacks
1 Tablespoon regular mustard
1/8 teaspoon Morton® Lite Salt
5 ounces of skinless boneless chicken breast
1/2 teaspoon butter
Preheat oven to 375° F. With a rolling pin, gently crush pretzels into fine crumbs and pour crumbs into a small bowl. Add mustard and salt – mix thoroughly and pour crumb mix into gallon size bag. Rinse chicken breast and shake off excess water but don’t dry chicken. Place chicken in a bag and shake to coat. Place on a baking sheet greased with butter, bake for 20–22 minutes.

Grilled Chicken Pizza
1 serving | 2 Vegetables – 1 Protein – 1 Starch – 1/2 Fat
2 large cloves garlic, chopped
2 large tomatoes, diced
1 green onion, chopped
1/2 teaspoon crushed red pepper
1/2 teaspoon dried oregano
½ teaspoon Morton® Lite Salt
1/4 teaspoon black pepper
1/4 teaspoon Splenda®
5-ounce skinless chicken breast
1 6-inch corn tortilla
1 cup chopped spinach
1 ounce 1% or 2% cottage cheese
Fresh basil to taste
To prepare the marinara sauce, melt butter in a pan and cook garlic until golden tan color. Add the tomatoes, green onions and spices, lower heat. Cover and let the sauce simmer for 20 minutes, crushing the tomatoes to the desired consistency while the sauce thickens. While you are letting that cook down, season chicken as desired. Grill or sauté until cooked. Shred the chicken with two forks. Preheat the oven to 425 degrees F. Grab a corn tortilla and place in the oven for a few minutes to warm it up. Place a cup of chopped spinach in a bowl and add approximately 1 ounce of cottage cheese; mix well. To put together the pizza, use the tortilla as your crust, add the marinara sauce to preference. Add the chicken and spinach mix. Top with freshly chopped basil and place in the oven for 10-15 minutes or until all the ingredients are warm.

Spicy Chicken Noodle Soup
1 serving | 1 Protein – 2 Vegetables – 1 Fat – 1 Thermo-Snack
1 teaspoon olive oil
5 small green onions, chopped
3 stalks of celery, diced
12 ounces of water
1 package Chicken Noodle Soup Thermo-Snacks
4 ounces cooked chicken breast (shredded if possible)
2 teaspoons chili powder
1 teaspoon onion powder
Red pepper flakes to taste
In a small saucepan, heat olive oil. Over medium heat, cook celery and onions until they start to get soft. Remove from pan. Add 12 ounces of water and bring to a boil. Once the water is boiling, add Chicken Noodle Soup Thermo-Snack. Bring back to boil. Turn heat down to low. Add chicken, celery and green onions back into the pan. Add chili powder, onion powder and red pepper flakes. Let simmer for 10 minutes and enjoy!
